Our Farm Team

Sass Ayres

Farm Manager

Hailing from the wild and whacky sunshine state of Florida, Sass is a beach-bumming, swamp-enthusiast, and former marine biologist turned mountain-loving landlubber.

She holds a Masters degree in Clinical Nutrition from Bastyr University, where she also received extensive formal training in herbalism & herbal sciences, permaculture, & landscape design. Since 2010, she’s spent her days learning and working in nearly every part of the farm-to-table and farm-to-apothecary movements.

Sass manages the farm & crew, heads our dried herb production & herbal product development, oversees our social media presence, write.

In her free time, she’s a hiker, medicine maker, food & plant medicine blogger, & botanical baker on a mission to rebuild bridges connecting people back to this planet. Her favorite mediums: hands in soil and beautiful plates of delicious food straight from the earth!

Land life is a good life, but in the next one, she’d really love to return to the ocean as a manta ray.

Erika Swing

Bookkeeping and Office Manager

While living vicariously through farm tales of lives lived completely at the wild whim of Nature, Erika provides back-office support and accounting for Mystic Roots.

She’s damn good at making sure we have all our t’s crossed and i’s dotted. However, if she could do it all over again, she’d ditch dealing in financial transactions for some dirt, a couple of rocks, or a sky full of stars. In the next life, she’s going for biologist, geologist, or astronomer!

She and her husband live in Leicester with their full house of 3 teenagers, 2 cats, 1 dog, and a single corn snake. And when she’s not keeping us feral farm folk in line, she loves to get out for a good hike (especially where wildflowers and salamanders are involved!), a nice swim in a cool mountain stream, a canoe paddle, or some live music. She also loves a good puzzle, speaks fluent Spanish, and has a penchant for fostering lil’ kittens.

Tim Kim

Sales and Product Development

Originally from South Korea & leaving Minnesota after high school, Tim has called many places home but none have been as wonderful as the 15 years spent in North Carolina.

The mountains of North Carolina are where he learned to climb rocks, started his first business, & raised both of his beautiful kiddos.

With a degree in business, he’s enjoyed not only building projects around his passions but also helping others in their pursuit.

Coming on board with Mystic Roots Farm, Tim brings over 20 years of sales experience to the team & is very much looking forward to helping establish lasting relationships in getting good food & medicine to the local community & beyond.

Nature is Medicine.
Handle with care.

We're human hands-on all the way.
